La plataforma internacional que busca promover a los mejores restaurantes y bares del mundo a través de sus listas creadas por expertos de la industria, The World’s 50 Best, está a punto de iniciar una campaña de alivio para los mayores exponentes de la industria de la hospitalidad. 50 Best for Recovery es un proyecto compuesto por varias iniciativas para ayudar de cualquier forma posible a chefs y empresarios que están haciendo hasta lo imposible por mantenerse cerca tanto de sus comensales como de sus colaboradores.

Esta iniciativa nace de tres pilares que sostienen las áreas en las que los restaurantes requieren más asistencia. El proyecto brindará estímulos fiscales esenciales, información confiable e iniciará la conservación sobre experiencias y visiones del futuro cercano.

Fondo de alivio internacional

De la mano de San Pellegrino y Acqua Panna, la organización iniciará un fondo que se utilizará para apoyar a una serie de organizaciones sin fines de lucro que trabajan en diferentes partes del mundo para ayudar a la supervivencia y la eventual reactivación del sector de la restauración. Estos fondos se recaudarán a través de donaciones de los socios de 50 Best, así como una serie de iniciativas accesibles a través de las cuales los clientes podrán retribuir a su querida industria restaurantera.

Plataforma de inspiración

Asimismo, 50 Best lanzará una plataforma llena de contenidos que tienen el fin de asesorar, informar e inspirar tanto a los miembros del sector como a los amantes de la gastronomía que quieran poner un granito de arena para sostener y reconstruir a la industria después de la pandemia. Esto como una forma de rendir un homenaje a la pasión, la habilidad y la determinación de restaurantes, chefs y sus equipos en camino a la reactivación.

Restaurateurs, chefs and hospitality workers across the world are working together and creating inspiring initiatives to help the industry and those in need. Let’s hear about some of these initiatives shared with us by Valentina Ortiz Monasterio, 50 Best Academy Chair for Mexico & Central America. 𝐈𝐧𝐢𝐭𝐢𝐚𝐭𝐢𝐯𝐞: Bake-at-home cookies and ingredient deliveries Chef Elena Reygadas, Latin America’s Best Female Chef 2014, is the owner of Panadería Rosetta, a bakery that produces delicious goods for restaurant Rosetta, No.27 in Latin America’s 50 Best Restaurants 2019, and for the wider public. The chef set up a delivery service for her bakery’s cookie dough, so that people can buy the dough and make delicious cookies at home. Vegan dough is also available. At the flagship Rosetta, Reygadas adapted her menu for takeout and delivery, with daily specials, wines and boxes of high-quality ingredients available to buy online. Another chef who is striving to support local producers during the pandemic is Enrique Olvera, creator of the world-renowned Pujol, No.12 in The World’s 50 Best Restaurants, and Cosme restaurants. Cumbre virtual

El tercero de los pilares de asistencia de 50 Best for Recovery es poner las miras en el futuro, por eso, durante el mes de septiembre de llevará a cabo Recovery Summit, una cumbre virtual en la que habrá clases magistrales, charlas, estudios de casos, entrevistas y foros de discusión con la idea de reunir a la comunidad gastronómica del mundo para explorar versiones de un mundo post pandemia entre restauranteros y comensales.

Competencia desde casa

Con el fin de alimentar la creatividad culinaria, la organización publicará un libro electrónico que se podrá descargar a cambio de una pequeña donación lleno de recetas de los mejores chefs y bartenders del mundo. Además, iniciará un concurso en redes sociales abierto a los amantes de la comida, en el que sus creaciones serán juzgadas por los chefs correspondientes.
